So simple…. Great on its own for a light meal, just add fresh, warm ciabatta rolls – or serve as an accompaniment to meat or fish….
1 tablespoon extra virgin olive oil
2 medium garlic cloves, thinly sliced
1 tablespoon pickled capers, drained and rinsed
1 handful rocket leaves, roughly chopped
Cook pasta in large pot of rapidly boiling water until al dente, or to personal preference.
Meanwhile, sauté garlic in the olive oil until just beginning to turn golden. Add capers, sauté for a further minute or two, remove from heat.
Drain spaghetti and add to garlic and capers, giving a mix to coat pasta. Toss rocket through – return to heat, just enough to wilt rocket. Season with a twist or two of black pepper.
To make a more substantial meal, try adding canned tuna or salmon, or big juicy prawns….
