Tuna caper pate….

Mmmm… Tuna paté – a really quick and tasty lunch idea – lovely in a jacket spud, great with avocado,  or delicious with a warm, crispy baguette…. equally good with or without capers….or try adding a few chopped olives as an alternative…..

1 can tuna in brine, drained and flaked
3 spring onions, chopped (or half a small onion, finely chopped)
1 table spoon pickled capers, drained
3 tablespoons cream cheese (or cottage cheese if preferred)
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
2 tablespoons Greek yoghurt
Black pepper

Blend tuna, onions, cheese, olive oil and lemon juice until smooth. Season with black pepper to taste. Add the Greek yoghurt and blend until combined. Put into a bowl, stir in capers, add another twist of black pepper…. Voilà!

What could be quicker than that…. Why not rustle up a batch of Scottish Oatcakes…. to accompany it…..
